Cooking with Nina: A Summer Inspired Menu

Nina Yahalomi Klevitsky isn’t just Detroit’s resident Jewish Agency for Israel Shlicha, she’s also one heck of a cook! Join Nina in the kitchen and learn to make the perfect summer meal inspired by both summers in Israel and Nina’s last three summers in Michigan.

The Menu:
Zucchini Quiche
Baked Potato and Beet Latkes
Cauliflower and Tahini Salad Malabi (an Israeli dessert)

If you would like to cook with Nina in real-time during this virtual event, have these items handy. If not, recipes will be provided.

Zucchini Quiche
5 big zucchinis – grated
1 very big leek (around 1.5 pounds) or 4 big onions – coarsely grated
1 chopped bundle of dill or parsley
1 cup whole flour (or regular white flour)
4 eggs
Salt
Ground black pepper
Olive oil
A mix of sunflower seeds, sesame and/or Nigella seeds 

Baked Potato and Beet Latkes
1 pound coarsely grated beets
1 pound coarsely grated potatoes (2 medium size potatoes)
Half a bundle of chopped parsley (1/2 cup)
5 ounces crumbled Feta cheese (preferably Sheep Feta)
1 egg
½ cup of minced Quaker (you can mince it for a few seconds in the food processor)
1 tsp salt
½ tsp ground black pepper
2 crushed garlic cloves
Olive oil
For serving – Raw tahini (optional)

Cauliflower – Tahini Salad
1 Cauliflower
Olive oil
Raw tahini
1 lemon
Salt
Ground black pepper
Garlic (optional)
½ cup chopped parsley 

Malabi
½ pint heavy cream
1 cup 2% or whole fat milk
½ cup sugar
3 tbsp cornstarch
Rose water (not extract! – can be bought in Walmart/Babylon Food Market/ Plum Market)
